Hmm, not sure about that Lucy. My fairly new Blackstone sure isn't stainless, it's got a steel flat top. In the instructions, after each use you have to wipe it down with some oil, I use vegetable oil. The first time I didn't put enough oil on it, and had to wire brush and redo the season on a couple of patches that rusted. I put plenty of oil on that thing now.
