This was the first brisket I ever smoked. I was scared of those big packer briskets that are usually 12 pounds and more, so I found this 4 pound trimmed one at Sam's. It was good off the smoker, but the next day the leftovers were pretty dried out. I finally smoked a packer brisket, and holy shit that meat was good until I ran out of it a week or so later. Lesson learned.
